Quick & Easy Cake Pops

I’m so excited to share with you my first ever Trim Healthy Mama recipe!

I’ve played around with making my own recipes for quite some time but never thought they were good enough to share… Until now! I really wanted some healthy cake pops but not a full batch that included a bunch of steps, turning on my oven, etc. So I decided to make up my own single-serve recipe and it worked like a charm! (Skip to the end for the full recipe without pictures and dialogue.) This pregnant mama was definitely satisfied.

Combine all cake mixture ingredients (except cream cheese). If using coconut oil, this does not need to be melted first. Microwave for 60 seconds.

Mash the cream cheese up with your cake mixture.

Form into balls and place in freezer for a few minutes while you make the coating.

Melt the coating mixture (this takes about 60 seconds) and remove balls from the freezer. Coat the cake pops and return to freezer for 10-15 minutes. Or less, if already hardened enough to eat.
